[食譜] 棉花糖OREO起司蛋糕🍰 Oreo Marshmallow Cheesecake (7 inch)

因為加入所上的cake club🍰,每週都有蛋糕分享😋
成員每隔一段時間就會輪到要做一顆蛋糕🎂。

由於想吃起司蛋糕,又沒有吉利丁片,上網搜尋了不用吉利丁片做蛋糕的方式。
意外發現可以用棉花糖😳!太神奇了👏👏👏!在club中分享,大受好評!👍
也有人跟我詢問食譜。附上當時自己寫的英文版😛。

材料

  • 基底
  1. Oreo餅乾(去掉中心的夾心)     150 g 
  2. 無鹽奶油                                         75 g 
  • 起司蛋糕體
  1. 奶油起司(?)                             300 g 
  2. 白棉花糖                                         225 g 
  3. 無糖優格                                         150 g
  • 蛋糕表面
  1. Oreo餅乾(去除夾心後磨粉)     適量
步驟
  • 冰箱取出的無鹽奶油與奶油起司在室溫放置一段時間使其軟化。
  • 在蛋糕模內部鋪上一層鋁箔紙。
  • 將Oreo餅乾去除夾心後磨碎,並與室溫軟化的無鹽奶油混合均勻後,鋪在七吋圓形蛋糕模底部,鋪好鋪滿😏,壓緊壓實壓平。置入冰箱至少30分鐘。
  • 將軟化的奶油起司與無糖優格混合(一邊隔約40度C的溫水加熱一邊攪拌)直到表面看來平滑。
  • 取一大碗放入白棉花糖(若買到的棉花糖很大塊,可以先用剪刀剪成比較小塊的尺寸比較容易融化)。在微波爐500w加熱2-3分鐘(碗要夠大,因為白棉花糖加熱後會體積變很~~~大😨!)
  • 融化的白棉花糖與奶油起司、無糖優格均勻混合後,倒入覆有Oreo餅乾底的蛋糕模中。將表面弄平整,放入冰箱冷藏至少3小時。(隔夜更好。)
  • 當從冰箱取出後,在表面撒上過篩的Oreo餅乾粉。
  • 完成!

Steps:
  1. Remove filling from Oreo, crush biscuits and mix well with melt unsalted butter
  2. Pour into 7 inch cake tin (covered by foil) and make sure tight it well and flat enough on the bottom, then leave the cake tin in fridge for 30 mins
  3. (Leave cream cheese at room temperature to let it become much soften before using would be easier for this step) mix cream cheese and sugar free yogurt (double-boiling, water temperature around 40 degree C), keep stir them until it looks smooth
  4. Cut white marshmallow into smaller pieces and melt them by microwave for 2-3 mins under 500w (please use a really big bowl in case marshmallow will expand after heating)
  5. Mix well melted marshmallow with cream cheese mixture.
  6. Pour into the cake tin containing biscuit bottom and make the surface smooth,
    then leave it in fridge for at least 3 hours (overnight is better)
  7. When take out the cake, using sieve to spread Oreo biscuit powder on the
    cake
  8. Enjoy it!
